Our laminated pasta is symbolic of the history behind the art of pasta-making in our region of Liguria.
The mixture is passed through series of cylinders of decreasing distance between them until a sheet of the desired thickness is obtained. This system avoids the pasta overheating, due to the pressure to which it is subjected throughout the process. The sheet obtained airy and light with a rough texture , which then passes through a shaper that with gentle movements creates these particular formats.
