BRICHETTI from Pastificio Artigianale Alta Valle Scrivia
with traditional Genoese Minestrone Soup

Ingredients for 4 people:
Brichetti 200 gr
100 gr borlotti beans
4 tablespoons of extra virgin Olive Oil
1 finely sliced onion
½ celery stick
4 swiss chard leaves
4 lettuce leaves
2 skinned ripe tomatoes
1/2 Lt. of stock
1 teaspoon of chopped fresh parsley
2 basil leaves
grated fresh parmesan cheese
Wash all the vegetables and chop into small pieces, add them to the stock and bring to the boil, add the Oil, salt and leave to cook for at least 2 hours, then add the Brichetti and when cooked add parmesan to taste. Place a spoonful of pesto in the serving dish and ladle over the soup. Serve with bread crostini.
