Ingredients for 4 people:
Farfalle 320 gr
2 tablespoons of Extra virgin olive oil
1 clove of garlic
half a yellow pepper
half a green pepper
half a red pepper
half an aubergine
half a red onion
a piece of carrot
10 Pachino Tomatoes
2 tablespoons of Passata
Cut the vegetables into cubes and stew in a frying pan with the oil and finely chopped garlic and onion.
Add a drop of water and the passata and turn down the heat and cook for 10 mins.
Add the boiled, drained Farfalle and stir before serving.
